Toddler Dinners: Attack of the Leftovers

I have talked many times how I am a leftovers hoarder when it comes to toddler dinners. 1/2 a serving of broccoli? Throw it in tupperware. 1 chicken kabob left from the restaurant? Wrap that shit is tin foil. Our fridge is ALWAYS packed out with containers and things in foil. It is a little scary really but boy does it help.

That is one thing no one told me about motherhood, the amount of plastic containers I would need. When Landon was an infant I made a smart decision. I donated my hodge podge of rubbermaid containers from over the years and bought a whole new nice matching set from BJ’s. Interlocking lids. Standard sizes. GLORIOUS. Best decision ever. Now my pantry actually looks organized! That was step one to easier meals strangely enough.

This past week, we had a lot of random nights. I had a girl’s night on Monday and dad got chinese takeout so…LEFTOVERS plus some from my stash. The return of OCTODOG! The casserole is leftover from a cookout and the rest I just have on hand.

Then the next night we had homemade pizza. While Landon has slowly started to like pizza, it isn’t really a good consistency right out of the oven for him…so we planned to give him something else while we ate.  He requested fish nuggets (which are super rare)…so off we went. I made a bowl of steamed broccoli to keep for the week and threw everything else together:

And so then Wednesday, he had pizza! Leftovers FTW!! Also the rest of the broccoli. Natch

    Leftovers are our bread & butter…which save us from eating bread & butter for work lunches.
    Will he eat cold pizza? Maelle dives right in to cold leftover pizza…reheated? Notsomuch. Weird.

    Also? You said BJ.
