Informericals and Mexican Pizzas!
alternate title: what to make for dinner when you are in a pinch and everyone likes something different.
Behold…the Mexican Pizza! Ever been sitting in front of the TV at 5 am because you are A) drunk B) suffer from insomnia or C) have any child under the age of 2? Then I am sure you know of the Xpress Ready Set Go. Truth be told, K introduced me on one non-NFL fall Sunday and I witnessed the bad boy…and now we have it. One of the top things to make, mexican pizzas. You can pretty much put anything in them. We go simple: turkey, beans, cheese and salsa. But you can do anything. Chicken with black beans and corn? Sure! Tofu and roasted veggies? Why not? Just cheese? OF COURSE! The sky is the limit. This meal takes about 15 minutes. That is enough time to heat 2 pizzas and fillings. By doing 1 pizza at a time, you can have yours with guacamole and chives while hubby wants meat and cheese only. Everybody wins!
To note, I think you could do this same idea with just a frying pan or toaster oven but it really wouldn’t be the same…THE NOVELTY Y’ALL!

Because of your post I watched the ENTIRE infomercial yesterday afternoon! Do you cook other things in the Xpress? I was seriously impressed.
Mini regular pizzas with 8″ pita breads are DELICIOUS. Customizable. I get stuff from the salad bar at work. I have made omelets(works great…less mess). I think I may have cooked chicken in it. I can’t remember. I need to do more but i forget about it.
